Temperature is a vital part of fermentation in winemaking
Desirable fermentation temperatures vary for red and white wines. Red wine fermentation temperatures are optimally between 20-30°C while white wine fermentation temperatures are recommended at or below 15°C.
Deciding the ideal temperature for wine fermentation is a tricky science which largely depends on the type of wine the brewer intends to create.
